Who knew, a comic / hypnotist who loves to cook.

I always try to be accurate when describing myself. For example – I have a guitar, but I am not a “guitar player”, I have golf clubs, but I am certainly not a “golfer”, and I love to cook, but I am definitely not a chef. I have no training and truthfully have no idea why one of my recipes works.

I enjoy watching cooking shows, (mostly on the Food Network) and even occasionally get a really helpful hint / tip from one of the shows. However my problem(s) with most cooking shows are : I often don’t have some of the kitchen equipment / gadgets they use, I often times don’t have ingredients they put in their recipe. Speaking of ingredients many cooking shows use; I often times don’t have them, don’t know where to get them, don’t have room to stock them, in some cases don’t want to spend the money on them, and in many of the cases it sounds like an ingredient I wouldn’t want to put in MY food.

When I cook, I almost always see what I have in my house and then try to figure out what I can make with what I have on hand.
I am not cooking for a family or for groups, so I always cater to my own sense of taste. Consequently, I cook with a lot of spices and herbs, always looking to pack my meals with a lot of flavor.
Also, I have become concerned with the items available at the grocery store. So much of the food and ingredients we buy are loaded with added sugar, salt, preservatives, coloring, and other (what I consider) harmful additions that I don’t want to eat.
I understand the more processed items we buy, the easier it is to cook. For example, it is much easier to open up a jar of spaghetti sauce than it is to start with whole, peeled tomatoes and make the sauce from scratch. There are only 24 hours in the day. Time and money are both valuable resources that cause people to make choices that balance what is possibly best for them vs what is quickest and easiest.
I recognize with the job I have and no kids at home, I have more free time than many people. So my recipes may not be a realistic option for busier people (and for people who don’t enjoy cooking)

My recipes are often inspired by dishes people know and love, but my versions are not classically prepared.
For that reason, I always include the word  “INSPIRED” – example  My Chicken Scampi (INSPIRED) recipe.
There are a few reasons, I usually include the word inspired. I do what I can to lower the carb count as much as I know how.
I frequently make substitutions to ingredients to attempt to make the dish lower in carbs, hopefully healthier, and with as much or more flavor than the classic dish.

As of now, I am still trying to figure out how to produce a quality video, so my camera work and some of the edits are a bit rough.
Hopefully with time I will improve. My recipes are more of a guide to cooking something tasty, so I highly recommend viewers season to their own taste, leave out any ingredient(s) they don’t like, and add any ingredient(s) into the recipe they think would work better.
